We made empanadas de pino which are the classic Chilean empanada. Empanadas are stuffed bread/pastry goodies that are (usually) served hot and they are best fresh out of the oven.

Empanadas de pino have a beef filling with onions, spices, one olive, and one little chunk of boiled egg. It is very specific! During the cooking class, we did it all— we made the dough and the filling, we stuffed the empanadas and folded them using different techniques, brushed them with egg wash, baked them, and in the end, we got to devour them. They turned out very delicious!!

The cooking class we did was at a local woman’s home, her name was Valentina and she was a hoot! During the class, we learned so much about Chile, empanadas, local spices, and so much more. The recipe we made was her grandmother’s, it was fantastic!
