One of my ship roomies, Camilla, was a guide on the voyage and is a scientist. As part of job and research, she was collecting data in a 20-30km stretch of the Drake Passage call the Antarctic Convergence Zone (the area where temperate subantarctic water meets cold polar water). Camilla was collecting the data and would submit it to the Royal Dutch Meteorological Institute.

One of the evenings, I helped out and learned a lot! We measured sea water temperature, air temperature, air pressure, humidity, wind speed & direction, waves, swell, cloud cover, and cloud types.

Measuring the water temperature was quite complex, just kidding - we literally threw a bucket overboard and pulled it back, attempting not to bang the ship too much. We would then toss in a thermometer and would wait 5-10 minutes before reading the results.
